Buttermilk Chocolate Dream Cake


This buttermilk chocolate dream cake is so simple and easy to prepare! Rich, moist, and very delicious – if you adore chocolate like I do then this dessert is the real deal for you! You will need 25 minutes to prepare plus 45 minutes to cook. Here is the recipe:


Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • A pinch of salt
  • 1 ¾ cups sugar
  • 1 stick (½ cup) unsalted butter
  • 3 tablespoons unsweetened cocoa powder
  • 100 grams (3.5 oz.) dark chocolate (70% +), melted
  • 3 eggs
  • ½ cup vegetable oil
  • ½ cup buttermilk
  • 1 cup water
  • 1 ½ teaspoon vanilla extract

For the icing:

  • 1 stick (½ cup) unsalted butter
  • 3 tablespoon cocoa powder
  • 3 ¾ cups powdered sugar
  • 6-8 tablespoons buttermilk
  • 1 teaspoon vanilla extract

 

Instructions:

  • Preheat the oven to 350°F/180°C/Gas Mark 4. Lightly coat a 13 by 9-inch pan with nonstick baking spray with flour. Set aside.
  • In a large bowl, combine together the flour, salt, baking powder, baking soda, and sugar.
  • In a saucepan, on low heat, melt the butter and dark chocolate, then fold in the cocoa powder, water, and oil. Heat to a boil, and boil for one minute.
  • Meanwhile, in a small bowl, combine together the buttermilk, eggs, and vanilla extract. Add the heated mixture into the flour mixture and combine. Add the buttermilk and egg mixture and stir until well incorporated.
  • Pour the batter into the prepared pan. Place in the oven and bake for 35 -45 minutes or just until a tester inserted into the middle comes out clean. Let it cool for at least half an hour before icing.

To make the icing:

  • In a small saucepan, combine the cocoa and butter and cook until is melted completely. Remove from the heat and add the vanilla extract.
  • In a large bowl, pour the powdered sugar and then add the hot mixture. Stir to incorporate. Apply 1 tablespoon buttermilk at a time, stirring, until you get the icing to a pourable consistency, however, not very thin. Spread over the pound cake. Allow setting for 10 minutes. Slice and serve.
