Italian Apricot Gelato


This apricot gelato is so refreshing, fruity, and delicious! It is a simple Italian recipe that will take you just a few minutes to prepare it plus a few hours to set. Perfect for all apricot lovers to enjoy these days! Here is the recipe:

Ingredients:

  • 300 grams’ apricot
  • 125 grams’ sugar
  • 150 ml heavy cream
  • 170 ml milk

Instructions:

  • First, rinse the apricots, then split in half and remove the core; cut them into pieces.
  • Next, in a saucepan, add the apricot pieces and the sugar. Place over low heat and let it melt for a few minutes, stirring occasionally, so the apricots release their water. Set aside.
  • Then, pour the apricot and sugar mixture, the heavy cream and the milk minutes into an ice cream maker and prepare it according to the manufacturer’s directions. When the gelato is done, transfer to a plastic dish, cover and freeze for at least 2 hours before serving.

Note:

If you do not have an ice cream maker, mix all the ingredients using an electric mixer (after washing and cutting the apricots into pieces) until you get a creamy mixture. Place it in a freezer for 1 hour and then rip it back to the mixer to melt the ice crystals forming. Place it in the freezer and, every 30 minutes, mix it (repeat the operation 3-4 times). It will be ready to taste after 4 hours.
